How To Keep Wine Fresh

We've all been there. You open a wine, take a glass or two, put the cork back in the bottle, and wonder: How long is this vino still going to exist skilful?

The answer—like everything to do with wine—is that it depends. What causes an open canteen of wine to deteriorate is exposure to oxygen, merely diverse factors mitigate its effects. For case, Master Sommelier Pascaline Lepeltier says, "I've constitute that wines exposed to oxygen during vinification last longer, both in aromas and texture; acerbity is a plus; so are tannins—which besides ways skin-contact white wines." How long will an open bottle of wine last?

To test out some of Lepeltier's suggestions, I opened thirty bottles and kept them open up over the course of a calendar week. Certain enough, orangish wines (where white grapes are diminished on their skins, calculation tannins and an amber hue) did well; the 2022 Troupis Ekato Moschofilero from Greece crushed the competition and tasted nearly as skilful on mean solar day vii as information technology did on day one (a pity that simply ane,200 bottles were made). 2022 Vietti Roero Arneis ($24)

Winemaker Luca Currado'south male parent helped save the Arneis grape from extinction back in 1967. Currado makes this lime-zesty white in a way that allows him to keep a bear upon of carbon dioxide in information technology. He says, "It's the all-time and most natural possible preservative."

2022 Coenobium Ruscum ($30)

This herbal, appley orange vino is fabricated by Italian winemaking star Paolo Bea for the sisters of the Cistercian guild in Vitorchiano, 90 minutes north of Rome.

2022 Massican Gemina ($32)

A tiny amount of retained carbon dioxide contributes to the incredible freshness of this stony, lemony Napa white. A alloy of Pinot Bianco and Greco di Tufo, it sustains its flavor incredibly well in one case opened.

2022 Cos Pithos Bianco ($35)

Sicily'southward Cos ages this earthy, bister-hued Grecanico in clay amphorae, allowing the vino to macerate on its skins for over a month. Information technology's long been a get-to canteen for fans of orange wine.

2022 Mauro Veglio Barolo ($40)
